Thanksgiving Prep

Good Morning Darlings!

Turkey day is almost upon us. What are you serving at your house?

Eric and I are having a tiny little dinner with a bacon wrapped turkey breast. He will not tell me how he is going to fix it so I will just have to be surprised. Wonder if it will look like this.

Bacon and turkey breast. This is going to be great!

Sides will include my mama’s cornbread stuffing (it wouldn’t be Thanksgiving without it). Eric has requested a spice cake for dessert, so we are whipping that up, too. I imagine there has to be a vegetable or two. Maybe.

I love pecan pie, but goshie, I want to fit into my party clothes for the season (so many parties to attend!) What’s a girl to do?

How about Oatmeal Pecan Pie? Is that any healthier? Uh, sure! You bet! It has oatmeal in it, y’all! Oatmeal and pecans are superfoods. So, go ahead, slather it in some brown sugar. It will offset all the sugary badness. I’m certain. One of my besties is doing the Paleo Diet and I told her it was downright un-American to do Paleo during Thanksgiving.

I’m sure I am not contributing anything positive to her will power. Shame on me.

Plus, what else are you going to do with all those pecans from your trees? We have tons of them here in Georgia. Don’t leave them for the squirrels. All the squirrels do is make your dogs go crazy. There should be no reward for that.

Oatmeal! Pecans! Healthy! Here’s the recipe.

Oatmeal Pecan Pie

Ingredients
0.5 (15 ounce) packages refrigerated pie dough
cooking spray
1 cup packed dark brown sugar
1 cup light corn syrup
2/3 cup oats
1/2 cup chopped pecans
2 tablespoons butter, melted
1 teaspoon vanilla extract
1/4 teaspoon salt
2 eggs, lightly beaten
2 egg whites, lightly beaten

Directions
Preheat oven to 325°.
Roll dough into an 11-inch circle. Fit into a 9-inch pie plate coated with cooking spray. Fold edges under; flute.
Combine all remaining ingredients, stirring well with a whisk. Pour into prepared crust.
Bake for 50 minutes or until center is set.
Cool completely on a wire rack.

Tomorrow I will give you my recipe for sausage balls and 3 different variations. Yay Thanksgiving!
