Thanksgiving Appetizers – Sausage Balls

Good Morning Darlings!

When I am asked to bring an appetizer to a party, sausage balls are my go-to recipe. It is ridiculously easy and they taste so good.

A couple of weekends ago, I had 3 parties to go to, so I whipped up 3 different versions of the basic recipe.

Here’s the basic recipe. Every southern cook makes these. It is part of our DNA.

Mmm, sausage balls!

Southern Sausage Balls

Ingredients
1 (12 ounce) packages extra-sharp cheddar cheese, grated
1 lb mild pork sausage (whichever you prefer) or 1 lb spicy pork sausage ( whichever you prefer)
2 cups Bisquick baking mix

Directions
Let sausage come to room temperature. (this is very important or mixute will be too dry).
Mix all ingredients together well using your hands and shape into small balls.
Bake 20 to 25 minutes at 375 or until lightly browned.
Yield 30.

Variations
For the first batch, I just made the basic recipe.

For the second batch, I added chopped jalapenos.

For the third batch, I sauteed some onions and added them, along with some raisins, to make it taste like my mama’s stuffing. This was my favorite version.

These take no time to make and freeze beautifully. So you always have something to offer guests who just pop in.
