Good Morning, Darlings!
Last night Eric and I were the happy guests at the home of our friends, Erin and Chris. Joining us were our darlings, Matt and Clint, who had introduced us all. Erin and Clint work together at Cartoon Network and are slap hilarious. Matt, Chris and my sweet Eric are no slouches in the make ’em laugh department either, so when all of us get together I leave with sides aching from all the laughter.
Erin and Chris are fresh from their honeymoon in Nevis, which is in the West Indies. For our dinner, they recreated a dish they had while in paradise, crab encrusted tilapia. Essentially, a crab cake topping a filet. How could anyone say no to that?
Here’s our sweet host, Chris, donning his chef’s jacket (sidenote: Way to go, Chris’s dad, on the swell gift!) Take a look at him and tell me you don’t see happy host written all over his face. Chris and Erin are like a great big hug and I love spending time with them.
While Chris is fixing us the most divine dinner, the rest of us catch up. Matt has the new ipad (super cool! I might need one) and shows me all the bells and whistles. It does just about everything. I love it! Erin shows us the gorgeous photos from their wedding and Clint keeps me up to date with all of his news.
But there’s always time to pose for photos, right? Of course!
Time to eat! First course, a beautifully arranged melon ball and proscuitto plate. Isn’t it pretty?
Now for those last minute touches to the entree – crab topped tilapia with sauteed squash over angel hair pasta. Deeeeelicious!
And now, what you’ve all been waiting for, straight from the islands….
I probably shouldn’t say this, but I had two helpings of the fish. It may be greedy, but golly, it was good.
Wait, there’s dessert? Banana cream pie? With homemade filling?? Who makes the pudding part of the pie from scratch? Our new bride, Erin, does, that’s who! Nom, Nom, Nom.
How was it? I think this picture of Clint says it all.
And before we knew it, it was way after midnight. Where did all the time go? Well, there was the visiting, the eating, the glasses of wine and the side splitting laughter.
I slept like a baby when I got home.
Thanks again, Erin and Chris. You always make us feel special. Because you both are so very special. We love you!
