Only a few more days of 2011 remain. Today I thought I would offer up a very pretty cocktail to toast 2012 in.
If you are having a soiree, it would be a swell idea to have a pitcher of cocktails all mixed up before the guests arrive. Eric and I did this for Christmas and everyone was tickled.
Pomegranate Margaritas were just the thing to serve with our Mexican inspired Christmas dinner and not only did they taste great, but they were all pretty and pink and fabulous. Eric came up with the perfect idea of rimming the glasses with pink sanding sugar.

Pomegranite Margarita
Adapted from the Food Network
Ingredients
Lime wedge, plus more for garnish
Sanding Sugar
Ice
4 ounces white tequila (I used Milagro)
2 ounces Triple Sec
1/2 cup pomegranate juice
1 lime, juiced (optional)
Directions
Pour sugar onto a plate or shallow dish. With a lime wedge rub along the rim of a glass and dip glasses upside down to salt the rim. Fill glasses with ice. In a cocktail shaker with ice place the tequila, triple sec, pomegranate juice, and lime juice. Pour into the salt-rimmed glasses and top off with club soda. Garnish with a lime wedge, if desired.
