My life is pretty breezy most of the time. I try not to let too many things bother me and when they do, I try to figure out how to best handle it.
When I heard that my precious friend Melanie had lost someone very close to her, it made my heart ache. How do you fix that?
Mellie’s friend Charlane was a marvelous blogger. And although I had never met her, I was moved by her posts. They were all so whimsical and charming. I bet you would love her, too. Take a look at one of her last posts here.
So how do you mend a broken heart?
As we all know, you cannot. Time is the only healer here. But I wanted to do something to honor Melanie’s friend. I loved Charlane’s post here and thought one way to bring about some happy memories was to bake a batch of cinnamon cookies (Charlane and I had a lot in common – cinnamon being among them).
These cookies will not bring Charlane back, but I know she is up there smiling on Melanie.
Cinnamon Cookies
Ingredients:
1 cup sugar
1/2 cup butter
1 large egg
1 teaspoon hazelnut extract (vanilla, if you don’t have hazelnut)
1 1/2 cups flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1/4 teaspoon salt
cinnamon sugar
Directions:
Prep Time: 20 mins
Total Time: 30 mins
1 In a mixer bowl, cream together sugar and butter; beat in egg and vanilla.
2 Combine flour, cinnamon, baking powder and salt.
3 Add to butter mixture.
4 Blend well.
5 Cover and refrigerate 2 hours or till firm enough to roll into balls.
6 Shape dough into small balls about 3/4-inch in diameter.
7 Roll in cinnamon sugar to coat.
8 Set cookies 1-inch apart on lightly greased cookie sheets.
9 Bake at 350° for 10 minutes or till the edges are lightly browned.
10 Cool slightly on pans, then remove to racks to cool completely.
