Mad For Coconut Macaroons

Good Morning Darlings!

I love coconuts. Coconut shrimp, pina coladas at the beach and coconut ice cream.

Ohhhh, I love Coconut Macaroons. Every once in a while I would treat myself at Godiva with one of their chocolate covered macaroons. So yummy. But at $3.00 a pop, a bit pricey.

What’s a girl to do?

A girl bakes them herself, that’s what!

And it’s easy, too. Really easy.

All ready for the oven!



Coconut Macaroons

Ingredients:
1 (14 ounce) package sweetened coconut (5 1/3 cups)
2/3 cup sugar
6 tablespoons flour
1/4 teaspoon salt
4 egg whites
1 teaspoon almond extract (I discovered I only had a 1/2 tsp of almond extract, so just subbed vanilla)

Directions:
Prep Time: 10 mins
Total Time: 30 mins

1 Mix coconut, sugar, flour and salt in a large bowl. Stir in egg whites (not whipped) and almond extract until well blended. Drop by tablespoonful onto greased and floured cookie sheets.
2 Bake 325F for 20 minutes or until edges of cookies are golden brown. Immediately remove from cookie sheets to wire racks. Cool completely.

Oh yes. Much better. And 20 of them cost close to just one at Godiva.
