Eat Your Veggies

Good Morning Darlings!

How is everyone faring in this heat? It is brutal in Atlanta and it only looks like it is going to get hotter.

We could grill out, but that just seems to add insult to injury. Who wants to start a FIRE when it’s 100F in the backyard?

Not me.

Last night, I knew we needed something light, but yummy. I went to the market to see what was fresh and lovely.

Veggies. Beautiful veggies. For once, that sounded so tasty.

I gathered corn on the cob, portobello mushrooms, pretty yellow squash, tiny turnips, cauliflower and broccoli. Chopped and mixed that all with some leftover potatoes, olive oil, garlic, thyme, salt and pepper and put it in the oven for 45 minutes at 450F.

It was heavenly. And since we had been so good, we each had some ice cream for dessert!

What’s in season this summer? Let’s take a look.

Arugula – spicy and fresh. This makes a gorgeous salad all by itself, or you could top a pizza with it for extra zing. Note: Add the arugula to the pizza after it comes out of the oven, not before.

Avocado – Nom, nom, nom! These beauties are so healthy and taste so good. I mash them up and use them as a substitute for mayo on sammies. And guacamole? I can’t get enough. Eat these and watch your skin glow.

Blueberries – What fruit screams summer more than blueberries? Cobbler, smoothies, over ice cream, pies, cakes, muffins. They are the super fruit. Enjoy them now, hoard and freeze them for the rest of the year.

Cucumbers – Find a friend with a garden, because I bet they are overflowing with these babies. Slice them and put them in water, mix in a salad, eat by themselves or learn how to make pickles.

Peppers – I dislike bell peppers, but these smaller ones make me happy. And they are growing like mad on my little plant outside without much love. Unlike that finicky basil that just died when I didn’t water it. Wimpy basil, why can’t you be more like the little peppers?

Zucchini – See cucumbers. If you know someone who grows these, more than likely they need to share because they have SO many. Zucchini bread, fried zucchini, grilled zucchini, zucchini on a stick – name it and you can do it with zucchini.

    Cold vegetable soups of all kinds. Zucchini lemon with buttermilk and dill, Gazpacho of course, white bean and roasted red pepper, tomato orange.
    On the dark side — need to stuff and fry zucchini blossoms while they’re in season!
